Description and recap

Standard Xifan Sunday. Our budget was slightly over $200 and we spend about $200.

It was a rainy day, so not many people showed up, about 20-30. We made 1 big pot of xifan (4.5 cups of rice), and had about 1/4 pot left over.

We took over the Annex kitchen to cook the bok choy, and Ben and Lillian went up to the penthouse to make popcorn chicken. The chicken took ~1.25 hours to fry.

  • Rice - 25 lb bag ($15?)
  • Pickled Wheat gluten - had 2 jar, bought 2 jars ($2.49 each)
  • Pickled Cucumber - had 1 jar, bought 3 jars ($2.49 each)
  • Pickled Lettuce - had 1 jar, bought 1 jar ($2.49 each)
  • Pickled Radishes - had 3 jars
  • Spicy Bamboo - had 2 jars, bought 2 jars ($2.69 each)
  • Canned Eels - had 3 cans, bought 3 cans ($1.89 each)
  • Fermented Duck Egg - bought 3 boxes ($2.99 each) (only need 2)
  • Salted Duck Egg - 1 box
  • Pork Floss - had 2 large tubs
  • Fish Floss - bought 1 small tub
  • Bean Curd - 1 jar ($1.19)

  • Chicken thigh - 6 lbs
  • Garlic - 4 medium heads (used less cuz garlic does not scale up well)
  • Ginger - 2 inches
  • Green onions, white and 1-inch of the green part, minced - 6 stalks
  • Soy sauce - we usually have
  • Mirin - (replaced with Chinese cooking wine)
  • Sweet potato starch - had several bags
  • 5-spice - didn't have?
  • Ground white pepper - had
  • Cayenne pepper - had
  • Basil - bought a bunch
  • Vegetable Oil - bought a jug (used about half)

Other Notes

The chicken was very popular and just about right amount. Started too late making the chicken: should start cooking the chicken before 10am. If captains are up for it, recommend starting to cut/marinate the chicken before 9am or the night before. Need at least 2 people to work on it.

For nian gao, when using the oven, use the bottom rack otherwise top will burn. Keep an eye on the nian gao because the oven is finicky.

We only used the toppings that were leftover from previous Xifan Sunday buying and didn't touch the toppings we bought this time (besides fish floss). We can probably decrease the amount of topping we buy in general.

We currently have 35+ lbs of rice.
